Tasting notes

This fruit forward red wine is friendly both on the nose and the pallet. Vinum Rouge promotes Syrah’s traditional notes of blueberry and mulberry elegantly balanced with Merlot’s hints of ripened plum and mild spices.

The red inky color provides for an attractively dense treat full of Jamy boysenberry and fruit cake, the medium acidity and mild earthiness then gives way to a supple mouthfeel, followed by a medium finish of green peppercorn and licorice.

The easy pairing for Vinum Rouge ranges from grilled lamb and slow cooked pork shoulder to cured meats and pungent cheeses.

This red wine is a perfect companion of umami flavors whether as an appetizer like blue cheese stuffed olives and prosciutto to main dishes like steak “frite “with mushroom sauce and smoked barbeque pork and even with dark chocolate/coffee nibs.

Perfectly ripe Syrah and Merlot grapes gives fruit to this wine, the vinification takes place traditionally with a crushing and destemming of the harvest. The grapes macerate in stainless steel vats between 10 and 15 days to remain on the fruit with a pleasant suppleness on the palate, where we can distinguish aromas of raspberry and blackcurrant with a greedy finish.

Vinum Rouge is aged for 1 year in stainless steel vats before being transferred then eventually filtered and bottled on the premises.
