Tasting notes

The deep red color with orange undertones leads to a delicate nose of ripe black cherry, cedar, violet, and cloves. Domaine Shadrapa Rouge translates the complex bouquet into a velvety, well-rounded mouthfeel and the balanced tannings into a medium nutty finish.

This, oak barrel aged, bold red comes highly recommended as a classic Mediterranean work of art to be fully enjoyed grilled meats, duck, and sharp cheeses.

Food pairing notes

The Domaine Shadapra Rouge is made from cabernet sauvignon and merlot in a Bordeaux style. Its powerful character and Mediterranean origin are reminiscent of a great Languedoc wine. But in the end, it has its own style, elegance and its own originality. Well-structured with real elegance and creative touch of ripe red and black fruits and strong and spicy balsamic notes in the final make this wine a staple of the great companion of gastronomy.

Domaine Shadrapa Rouge is a friendly wine despite its complexity. This well bodied red could perfectly pair with a wide range of foods like spaghetti pomodoro, roasted pork, classic ratatouille, aged goat cheese.

Vinification

The harvest is done manually, then is sorted and gently crushed. The duration of maceration is between 4 weeks and 5 weeks. We try to finish the alcoholic fermentation above 25 degrees to bring a roundness to the wine.

The wines are then aged for a minimum 12 months in French oak barrels, before being filtered and bottled at the estate when needed, using mainly cork stoppers ideal for aging the wine.
