Selian Reserve Chardonnay is truly magical as it is an old world Chard with warm climate characteristics. Lighter in color, this white wine opens with the aromas of white peaches, jackfruit, and toasted pine nuts. Full bodied, Selian is both buttery and fresh with notes of pear, fig, and caramelized sugar with a medium and bright finish.
A great wine for all occasions especially when served cold along with soft and semi soft cheeses, poultry, seafood, and nutty earthy vegetables.

When served cold between 48F and 54F, Selian Reserve Chardonnay complements a wide variety of foods most notably creamy soft cheeses like Camembert and Humboldt Fog, semi-soft cheeses like American blue cheese and Appalachian, as well as poultry and seafood like herb roasted chicken and citrus marinated trout or even with vegetarian dishes like wild mushroom risotto, seared asparagus, grilled zucchini with parmesan.

The harvest is entirely manual. The grapes are pressed slowly in order to preserve their integrity and aromatic finesse. After light settling, the musts naturally ferment in oak barrels (30% new wood).
The lees can be brought back into contact with the wine by “batonnage” in order to continue to enrich it. Malolactic fermentation takes place naturally during the winter. The wines stay on the lees for 11 to 13 months before being racked and blended. After a light filtration, bottling is carried out on the premises.
