The harvest is picked manually during the first rays of the sun to keep all the freshness of the grapes, which is essential to have a good quality of juice. A slow alcoholic fermentation is carried out at around 15 degrees to obtain the most aroma precursor, the duration of the fermentation is around two weeks at least at low temperature. Then the wine is aged for 8 months in stainless steel vats before being bottled and kept for another two months in perfect cellar conditions.
